cozy fall kale salad 🍁

this is my favorite fall salad. warm, sweet, a lil spicy, and v nutritious + comforting. she’s just that girl. perfect for when the air gets crispy and you want something that feels cozy, but still fresh. it’s v easy, assemble based on your preferences, bb. hope you love it!

INGREDIENTS

1 big bunch of kale, chopped (stems removed)

A generous drizzle of olive oil for sautéing

2 medium sweet potatoes, peeled and diced

1 pomegranate, seeds removed

Boursin Garlic & Fine Herbs cheese

Hot honey, to drizzle (this acts as the dressing for this salad, so use one you love)

Salt and pepper, to taste

METHOD

Preheat your oven to 400°F. Toss the diced sweet potatoes with a drizzle of olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 30-45 minutes, or until tender and slightly caramelized, flipping halfway through.

While the sweet potatoes roast, heat 2 tbsp of olive oil in a large skillet over medium heat. Add the chopped kale and sauté. Stir occasionally, until the leaves are warm, tender, and slightly wilted (about 5-7 minutes). Season lightly, if preferred.

Remove the skillet from heat. Gently fold in the roasted sweet potatoes, then sprinkle the pomegranate seeds over the top. Crumble the Boursin cheese evenly across the salad.

Drizzle hot honey over the salad, letting it melt slightly into the warm kale and sweet potatoes. 

Toss gently to combine, keeping the pomegranate seeds intact.

Serve warm as a side dish or light main <3
